While crop mastery is not immediately available in FarmVille 2, you CAN get crop mastery. First, you have to raise your experience level until you reach level 7. After you reach level 7, you will be able to attain crop mastery. While the game doesn’t tell you exactly how many times you have to plant and harvest a crop in order to reach mastery, you will reach it if you just keep planting and harvesting a crop after reaching experience level 7.

You can attain multiple levels of mastery, too (up to three levels of mastery). Each time you master a crop again, you’ll see another ribbon next to it when you go to the store to buy seeds. You’ll also be able to put a sign on your farm notating that you’ve mastered it.

By the same token, to get prized animals, feed one animal over and over, and eventually it will become a prized animal. When it becomes prized, it will take a LOT longer for it to be ready for feeding/harvest, but you will earn prizes (random depending on the animal) such as extra coins and experience points for mastering it.

When an animal is ready to become prized, you’ll see a blue ribbon sign above it. Tap it and you’ll earn a much higher reward for taking it to the fair than you would for just feeding it normally.

To earn huge profits every single time that you gain a level, first, rack up coins the slow, old fashioned way (normal farming) and spend them on a bunch of lemon trees, apple trees and other kinds of trees. Water them as you see fit. Then, gain a level well before they are ready for harvest. They will, of course, be ready for harvest instantly, and once they are, you can harvest them, get absolutely flooded with lemons, apples and other fruit, then go to the market stand and sell them for loads of coins. Each lemon, for example, is worth 17 coins, and you earn 5 lemons per harvest, so one harvest alone is worth 85 lemons for just one tree.
