Then go back to the game, and you will have all of your energy back, for every single one of the characters.

If you want to earn more gems, play the rounds where you have to challenge one specific new character (new pig, new bird etc) in order to unlock them eventually. Each round that you play against that new character will earn you gems as a reward, as long as you win. If you lose, you will earn coins, but not gems.
Another way to earn free gems is to complete all of the challenges for one specific race (group race, fruit smash, etc). Once you complete the five rounds, you’ll earn gems as a bonus. You will also earn gems as a bonus if you complete all of the challenges for a specific episode.
Be judicious with the expenditures of your gems and coins. Spend your gems only when you have an insanely hard stage to beat and you need to buy more power ups – otherwise, forget about spending gems. They’re not necessary. Don’t spend the coins on too many upgrades for the cart of an old episode, when you are about to unlock a new episode or when you have already unlocked one. Forget about upgrading a cart for an old episode – save your coins for a new episode.
Finally, you can buy coins or gems at any point. Gems can only be purchased with real life money through the App Store. Coins can be purchased using gems – there is no need to make any expenditures in the App Store when it comes to coins.
